2.要想蛋羹细腻平滑,必须先过滤蛋液,滤去浮沫。­
【贴心建议】­
图1.鸡蛋冲洗干净,准备和鸡蛋差不多等量的温开水(另外,蒸锅中倒上水烧开);­
【原料】鸡蛋1个,胡萝卜半根,鲜香菇3小朵,小葱3根,温开水适量­

图1.胡萝卜去皮切末,香菇去蒂切末,小葱切末,备用;­

3.蒙上保鲜膜是为了防止蒸汽回落到蛋羹上,造成蛋羹表面“坑坑洼洼”――我也用盘子盖着试过,效果没有保鲜膜好,所以我建议还是用保鲜膜,但是要用耐高温的那种哈!­
什锦鸡蛋羹­
图2.鸡蛋磕入碗中,加少许盐,兑入温开水,打散后,用滤网过滤一遍,滤去浮沫;­
1.兑入鸡蛋中的,[link widoczny dla zalogowanych],要用温开水,[link widoczny dla zalogowanych],否则就变成蛋花汤了哈;此外,关于温开水的量,喜欢干一点的蛋羹,就少兑一点水,反之亦然――我个人觉得1:1的比例,蛮好的,就像果冻一样。­
图3.图4.蒙上保鲜膜,用牙签在保鲜膜上戳几个小洞,放入水已煮开的蒸锅中,蒸7-8分钟即可,[link widoczny dla zalogowanych]。­
图4.图5.锅中加少许油(一点点即可),油热后,分别下入胡萝卜和香菇煸炒1-2分钟,倒入蒸碗中,再倒入蛋液,加少许盐搅拌均匀;­

原味鸡蛋羹­
图6.锅中倒入开水(或水先烧开),将鸡蛋液放入,蒸8分钟左右即可。­
